Innovative fermentation The coffee begins with a rigorous selection of the ripest cherries. After a first controlled fermentation of 36 hours, the coffee enters a second phase using must from previous fermentations. A mother culture enriched with blueberry pulp is then integrated into the process, allowing the bean to absorb natural aromatic compounds that intensely evoke small berries. The result is spectacular: a gourmet, vibrant, and remarkably balanced profile.
