Grown at around 1,750 meters above sea level under native shade trees, this SL28 reflects a balance between classic Colombian profiles and more refined processing approaches developed over recent years. The coffee is processed as a yellow honey, where a controlled amount of mucilage is left on the bean during drying. Combined with careful harvesting and fermentation control, this method builds a more structured sweetness while keeping the cup clean. In the cup, the profile leans towards pomegranate and red fruit acidity, supported by notes of panela, honey... The body sits in the medium range, with a rounded texture and a clean, slightly sweet finish that lingers without being too dominant. I tried this sample alongside all the other super fermented ones and this one really stood out. Trust me, it tastes like Kenya. Super clean cup, lots of cranberries and lemon, no fancy processing. Everyday cup!!!
