Grown at 1,750–1,800 meters above sea level, this Bourbon Ají varietal showcases how terroir and processing can come together to create an expressive cup of coffee. Processed using an advanced natural method, the coffee undergoes multiple carefully controlled fermentation stages—beginning with oxidation, followed by extended anaerobic fermentations in both tank and bag. A final thermal shock helps stabilize and preserve its complex aromatic profile, before slow drying on raised beds locks in clarity and sweetness. This layered approach enhances both fruit intensity and floral elegance in the final cup. I personally love brewing this coffee as a filter. The clarity you get highlights all those delicate floral notes, while the fruity sweetness is super intense.
