Roast Level: LIGHT Variety: Gesha Process: Natural Region: Alto Quiel, Panama Elevation: 1800 m We taste: Stonefruit, blood orange, sweet cherry, syrupy, refreshing, elegant when cool This Green Tip Gesha comes from Chombi, a 1.5-hectare plot within Mima Estate, sitting at 1,800 meters on the volcanic foothills of Barú. Seventy percent shade, rich volcanic soil, and cool nights that dip to 14°C. At harvest, cherries were floated to ensure only the densest, ripest fruit moved forward, then laid on raised African beds inside a drying greenhouse. Four days in, they transferred to Grain Pro bags for a gentle three-day fermentation before a long, unhurried 28-day drying. Altieri Specialty Coffee, founded by Italian American Eugene Altieri after moving to Panama in 1973, transformed two Boquete farms into a renowned family business.
