Grown by the Hernández family at 1,700 meters, this lot shows just how expressive the variety can be when thoughtful processing meets careful cultivation. This coffee follows a unique washed process with an innovative twist. The cherries begin with a brief thermal fusion step, submerged in 80°C water for 20 seconds. This gentle heat treatment helps release sugars and prepares the coffee for fermentation. After depulping, the extracted fruit juice is reintroduced, and the coffee ferments for five days using only its own sugars and a small amount of native, pre-fermented yeast from the same variety. The result is a controlled fermentation that enhances complexity while preserving origin character. In the cup, it’s vibrant and unexpected. It opens with a burst of Hubba Bubba gum sweetness, followed by soft mauve florals and a rounded plum depth. There’s a playful quality here, balanced by a clean structure and a smooth, lingering finish. This is a coffee that doesn’t take itself too seriously, yet still delivers where it counts.
