Ramon García is a first-generation coffee producer living in Concepcion Huista, Huehuetenango. During the harvest, only the ripest cherries are picked resulting in a total of three picking passes during harvest. Cherries are de-pulped the same day of the picking and fermented in water for 36 hours. After the fermentation, the beans are further soaked for 12 hours, washed and dried on a patio for six days. The town belongs to the municipality of Concepcion Huista where the locals speak indigenous language Popti. According to the elderly speaking Popti for a longer time, the word means "yellowcorn" or "yellow corn earth". "We started here 10 years ago. It was hard because the altitudes here are very high and the frost from the mountains often damaged our crops. However, this taught us ways to adapt ourselves toour environments and to learn new ways to work together with it" , tells Ramon. Ramon is part of a cooperative El Sendero which provides coffee producers support and information around Concepcion Huista in Huehuetenango region. The cooperative has 33 founders 10 being women and 23 men. the organisation itself has in total of 196 members of which 62 are women and 134 are men. The El Sendero Cooperative takes great pride with regards to gender equality and equal opportunity.
