Coffee overview Abel Salinas has become a mainstay here at H&S, and we look forward to his washed Typica Mejorado lot every year. This season he has produced a lot of subtlety: soft stonefruits, an abundance of florals, and an unmistakable chamomile presence. This is an interesting departure from his previous efforts, and we've leaned into it with the profile on our new Roest P3000 production roaster. TDS: 1.43 / EY: 23.77% We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
