Description
This is the fifth season of our experimental process partnership with Mokha King Coffee. From Mokha King: “Sourced exclusively from the high-altitude mountain of Eastern Haraz region, situated 1,800–2,200 meters above sea level, where the mild climate, moderate temperatures, and low humidity create ideal growing conditions. Such climate is one of the most important factors for its quality as well as the quality of the water used to irrigate the coffee trees. It depends on rainwater, dams and springs from the peaks of the mountainous highlands which are with a balanced mineral texture and fresh taste, giving the fruits of the coffee a unique sweet taste. The Yemeni coffee trees receive special care from the farmers, that produces 100% organic coffee beans free of fertilizers and pesticides. This coffee goes through a dry anaerobic process - ripe cherries were float sorted, then placed into sealed containers for a low oxygen environment for 4 days. Cherries were then dried evenly on raised beds until an ideal moisture level of 10.5% to 11% level was achieved.
