CGLE Cerro Azul Geisha Hybrid Washed

Description

Cerro Azul was the first farm in Colombia to produce a Geisha variety, and to this day solely produces Geisha at this farm. Their coffees have frequently been the supporting actors for many baristas on the world stage. From CGLE: “Each cherry is handpicked at the peak of ripeness, ensuring only the finest beans move forward. After a delicate flotation process to remove lighter cherries, we monitor the natural sugars before beginning a layered fermentation journey. For 14 hours, the cherries open up their flavours in open tanks. Next, they’re taken to a sealed environment for an 18-hour, oxygen-free fermentation, deepening their profile. Finally, they’re pulped and given a refreshing aerobic fermentation for 24 more hours, ensuring that each bean carries an unmatched depth and complexity. The coffee is then dried in a mechanical dryer at a temperature of 37°C.
