The natural process supports a rounder body and saturated fruit character, while the Java variety adds structure and clarity to the cup. About Finca Potosi, Cafe Granja La Esperanza Finca Potosi is part of Café Granja La Esperanza, the specialty coffee project led by Rigoberto and Luis Eduardo Herrera. The Herrera family’s work began at Potosi, where Juan Antonio Herrera expanded the farm beyond Typica by planting Yellow Bourbon, Red Bourbon, and Caturra, establishing a foundation for the variety-focused approach that continues across the group’s farms today. Café Granja La Esperanza works across multiple farms and microclimates in Colombia, producing a wide range of specialty varieties and processing styles. Their reputation is built on careful variety adaptation, precise farm management, and a long-running commitment to coffees that are expressive, technically produced, and distinct in the cup. About Java Java is an Arabica variety associated with Ethiopian landrace genetics and recognized for strong cup-quality potential, especially when grown at higher elevations. In specialty coffee, Java can be valued for its structured acidity, sweetness, and refined fruit expression, though those traits depend heavily on site, farming, and processing. The combination of Java variety, natural processing, and Café Granja La Esperanza’s precise production style made this a strong fit for Hydrangea’s menu: expressive, fruit-driven, and distinctive without losing clarity.
