It is a natural process coffee that remains remarkably clean from start to finish. ウォッシュトから積み上げた、きれいな精製 Clean Processing Built on a Foundation of Washed Coffee ドン・サビーノは、もともとウォッシュトコーヒーの精製からスタートした農園です。 その後ハニーの生産へと広がり、現在では生産量の多くをナチュラルプロセスにフォーカスしています。 ウォッシュトは、設備や生豆管理にとても繊細さが求められる精製です。 その経験を積み重ねてきた農園だからこそ、ナチュラルでも雑味の少ない、きれいなカップに仕上げることができるのです。 セントラルバレーの火山性土壌に恵まれ、除草剤や殺虫剤をほとんど使わず、丁寧に管理された農園から生まれたロットです。 Don Sabino originally began with washed coffee processing. Over time, the farm expanded into honey processing, and today much of its production is focused on natural process coffees. Washed processing requires great precision in both equipment and green coffee management. Because this farm has built its experience from that foundation, it is able to produce natural coffees with very little unwanted flavor and an impressively clean cup. This lot comes from a carefully managed farm blessed with the volcanic soils of Costa Rica’s Central Valley, where herbicides and pesticides are used very sparingly. 伝統品種ティピカを、ナチュラルで A Traditional Typica Variety, Finished as a Natural 品種は、伝統的なアラビカ品種である Typica(ティピカ)。 ティピカは収穫量が少なく、病気にも弱いとされるため、現在ではとても貴重な品種のひとつです。 さらにこのロットは、ティピカ単一品種をナチュラルで仕上げている点も魅力。 ウォッシュトで表現されることの多い繊細な品種を、果実感のあるナチュラルで仕上げることで、ティピカのやわらかさと、ナチュラルらしい甘さが重なったユニークな味わいになっています。 The variety is Typica, one of the traditional Arabica varieties. Because Typica tends to produce lower yields and is more vulnerable to disease, it is now considered one of the more precious coffee varieties. What makes this lot even more interesting is that it is a single-variety Typica processed as a natural. Typica is often expressed through washed processing, but by finishing it as a natural, this lot brings together the soft elegance of Typica with the sweetness and fruitiness of the natural process.
