Maya's coffee, processed by Lost Origin, has become one of the most in-demand coffees after Marin Wölfl used it to win the 2024 World Brewers Cup in Chicago. As we are preparing for Esther's world competition, this was on our bucket list to consider. Tri-Up Coffee in Taiwan helped us to source this coffee. This lot used Tri-Up's LOY-011 yeast for the 8-day inoculation period. We felt this coffee had all the aspects judges look for in their scoring, with a beautiful, elegant balance.
