Grown near Pitalito in Huila, Colombia, this Pink Bourbon comes from El Diviso, a farm run by the Lasso family and known for its meticulous cultivation and processing practices. The farm represents a new generation of Colombian producers focused on how variety selection, fermentation, and post-harvest precision can elevate both quality and expression in the cup. Pink Bourbon has become one of the most sought-after varieties in specialty coffee for its floral aromatics, vibrant acidity, and layered sweetness. At Huila’s high elevations, the cherries mature slowly, allowing the coffee to develop exceptional clarity and balance. These cherries were selectively handpicked at peak ripeness, depulped, carefully fermented to remove mucilage, and slowly dried to preserve stability and cup quality throughout storage and transit.
