Featuring Thailand’s Co-Fermented Process Coffee Co-Fermented Process — What Is It About? Co-fermentation is a coffee processing method that incorporates real fruit into the fermentation stage. It's a technique commonly found in multiple coffee origins, especially Colombia. But what if we replicated this process with Thai coffee? Let us introduce you to the co-fermented coffee from Thailand, crafted by our beloved farmer Jaroon, who always brings something exciting to Newbery Street Coffee Roasters. This journey began with Jaroon’s curiosity. While working on his farm, he noticed passion fruit growing next to the coffee plants. Inspired, he decided to experiment—adding passion fruit into the fermentation tank during an anaerobic process. The coffee and passion fruit were fermented together in a sealed tank for four days, then dried on raised beds for 24 days. The result? A coffee bursting with flavors of lime, orange, and passion fruit. As this is Thailand’s very first co-fermented coffee, the process is still being perfected. But it marks a bold step forward in Thai coffee innovation. This isn’t your typical co-fermentation—this is a curiosity-driven experiment, where passion fruit was added simply to see what might happen. It's time to taste it for yourself. Nestled in lush forest, his coffee trees thrive under a naturally shaded canopy—an ideal setting for exceptional cultivation. I met Jaroon after the COVID-19 pandemic, and knowing him has been a true blessing. He is a farmer deeply dedicated to his craft—coffee has shaped his journey in remarkable ways. One of my favorite things about him is his smile: warm, genuine, and a perfect reflection of his passion.
