Description
Hailing from Cafe de Altura San Ramon, in the Tarrazu region of Costa Rica, this bourbon, pacas and catimor mix coffee is grown in an area with a very unique micro-climate. Situated at 1450masl near the Irazu Volcano, facing the sea, the farm has the extremely fertile volcanic soil, as well as favourable sunshine, climate and humidity. Processed as a Yeast Inoculated, the cherries are first hand-picked at optimum ripeness, then sprayed with a solution of yeast, created using the natural yeasts from the coffee cherries, kickstarting the fermentation process without using fermentation tanks. During this process, up to 10% of the fruit pulp and mucilage is kept. This new method became popular in Central and South America for its low costs. The coffees are then sent to African Drying Beds for further drying, to reach a stable moisture content for around 25 days. The beans are then hulled and exported. This coffee possesses a flavour profile which is characteristic of the region, and highlights the fermentation applied. A sweet floral aroma, round body and sweetness, like cherries. A balanced acidity reminding us of hibiscus, and an aftertaste of nuts and spices, like cardamom.
