Flavor notes: Nectarine, honey, white tea, lilac Process: Precision Washed Variety: 74158 Region: Keramo, Sidama, Ethiopia Elevation: 2100 masl ------- About the Precision Washed Process At a washing station in Ethiopia, it’s easy to produce washed coffee—well, not easy, but at least it is doable! On farms, like Mate Mateyos’s, there are usually raised beds for naturals and it’s possible to do various fermentation experiments, but there aren’t tanks for the washing process. To solve this, Mate bought a small hand pulper, run by the muscles of the laborers on site. Coffee cherries are fed into it, and seed by seed the pulped coffee is spit out, hand-washed in barrels, then laid to dry on the raised beds. Doing it this way is incredibly labor-intensive. Normally, it’s done with a mechanized pulper, then the coffee is run through long cement washing channels where it is scrubbed, then to tanks at least 10,000 kg in size to ferment. After which, it’s washed again and then put out to dry. We named this process Precision Washing because that is exactly what it is: lot by lot, cherry by cherry, each kg of this coffee is transported, scrubbed, fermented, rinsed, and dried in the most hands-on way possible. This allows a lot of precision in the process, which is part of why it is such a delicate result.
