Description
From the high slopes of Cañas Verdes comes this standout lot from Abu Coffee - a producer we return to whenever we want a coffee that embodies the Panamanian terroir - this time from a Catuai, not a Geisha. Cañas Verdes sits in the Chiriquí highlands, where mist, volcanic soils, and cool nights push the plants toward slow, expressive development. Abu’s microlots are shaped by this mix of altitude and careful agronomy - sweet cherries, bright acidity, and the signature florality that has become their calling card. The cherries for this lot were picked at peak ripeness and processed with Jose’s meticulous approach for naturals - a multi phase fermentation, where the cherries are fermented, and then partially dried, followed by a further fermentation. This can lead to deeper notes in the cup, like red grape, and raspberry. The cherries are eventually fully dried there at the farm until 10% moisture. For us this Catuai is one the best we've tasted out of Panama. Jose's work to improve his Catuai through growing, and processing, means that this impressive Catuai is complex, rich, sweet, and clean for a natural. Don't miss it!
