As it settles, the profile deepens with the gentle warmth of brown spices and a touch of earthiness, introducing an intriguing savory balance. Mid-palate, notes of luo han guo emerge with a mellow, fruity sweetness that softens the acidity, while subtle hints of cumin lend quiet complexity. The textured, black tea-like body carries the cup into a lingering finish, where brown sugar sweetness unfurls slowly, leaving a harmonious and refined impression. Processing 1. Only ripe cherries are picked. 2. Cherries are then washed and sorted for floaters before being pulped. 3. Following which, the mucilage is hermetically sealed and then left to ferment in the sun. 4. Once completed, the cherries are then washed to remove the remaining mucilage and dried on raised beds till the targeted moisture levels (12%) are reached. 5.
