On the palate, a clean and structured acidity recalls grapefruit − bright, citric, and rounded − providing both tension and clarity. The mid-palate evolves with a distinctive vegetal character, as notes of yellow bell pepper emerge and build in definition, adding a savory counterpoint to the fruit-driven opening. Background Ethiopian coffee is typically processed by gathering cherries from multiple smallholders at a single washing station. Because of this, most coffee is distributed by village or washing station, rather than by producer. Coffee Libre purchases cherries from each producer in the Bensa region, processing them into individual lots and introducing them as "producer lots." The coffee presented this time is from a producer named Bekele Kachara. He is a seasoned coffee farmer with over 20 years of experience near the village of Murago in the Bensa region. He cultivates a 4.5-hectare farm with his wife and children. He cultivates unique Ethiopian varieties, including 74158, 74112, and 74110, and produces approximately 70 bags of green coffee annually. Bekele uses organic compost to care for his coffee trees and personally installs drying racks in the shade to maintain the cherries. He meticulously monitors the harvesting, drying, and sorting processes, carefully checking each cherry's condition before harvesting. Although he lacks official organic certification, his farm practices are sustainable, prioritizing both the environment and coffee quality. This producer lot, comprised solely of cherries grown on a single farm, not only ensures clear traceability, but also embodies the producer's touch, attitude, and environment. Through collaborations with producers like Bekele, Coffee Libre aims to introduce coffees whose names are linked to their flavor. These coffees offer more than just "good taste."
