Las Segovias — Nicaragua Caramel, brazil nuts, brown sugar, clean washed sweetness Even the best producers do not produce 100% of their harvest as micro-lots. That is part of coffee, and it is also why coffees like this matter. Las Segovias is a classic washed Nicaraguan coffee built around the idea of supporting producers across a broader range of quality, not only at the very top end of the micro-lot table. This SHG Special blend is composed of coffees from Luis Alberto’s farms, along with contributions from five other producers across Dipilto, Jinotega, and Matagalpa. Their farms sit between 1,000 and 1,500 meters above sea level, in some of Nicaragua’s most established coffee-growing regions. The producers deliver wet parchment to Beneficio Las Segovias, where the coffee is dried slowly on patios for 15 to 21 days. That is significantly longer than the average patio-dried coffee in Nicaragua, which can often dry in just 5 to 7 days. The result is a coffee with clarity, stability, and a gentle sweetness that feels both familiar and carefully handled. Our sourcing partner, The Coffee Quest, has been working in Nicaragua for approximately eight years. About six years ago, they met Luis Alberto, a producer whose attention to detail immediately set him apart. Nicaragua often feels like the land of big beans, with Pacamara, Maragogype, and Maracaturra planted here in remarkable volume. These varieties can produce beautiful coffees, and many producers are drawn to their quality, productivity, and price potential. But when Coffee Quest first began sourcing in Nicaragua, many of the coffees they cupped were good without fully expressing what they could become. That changed at Beneficio Las Segovias. Before cupping his coffees, Luis Alberto asked a question that revealed exactly how he thinks: “Aren’t you concerned about the water your clients are using?” He then set up five coffees, each brewed two ways: one cup with soft water and one with very hard water. The point was not just to taste coffee, but to understand how much water composition can affect flavor. Before the coffees were even evaluated, it was clear that Luis Alberto was thinking beyond production alone. He was thinking about the entire chain of quality, all the way to the final cup.
