Gloria is a mentee of Carmen Montoya, the farmer who first put Chiroso on the global stage by winning the 2014 Cup of Excellence. Our sourcing partner, Unblended Coffee, works directly with Gloria to help her refine her processing and bring her coffee to roasters around the world. For Gloria, coffee is both a livelihood and a means to educate her children — that purpose shows up in every carefully processed lot. What makes this coffee stand out Gloria hand-picks only the ripest cherries and ferments them in open tanks for 36 hours before depulping and sun-drying on raised beds to 12% moisture. That careful, unhurried process is what gives this Chiroso its clean, distinctive character. Chiroso itself is a rare Ethiopian landrace variety that somehow found its way to the mountains of Antioquia, and at 2,000 meters it develops a complexity that punches well above its small farm size.
