Description
David Berrio’s small garden produced the first Chiroso we truly fell in love with, and he continues to produce some of the highest-scoring Chiroso selections each year. This second harvest pass comes from the peak of the main harvest and is remarkably complex. In the cup we find a wildly tropical profile with ripe stone fruit and yellow florality. Region: Urrao, Antioquia Altitude: 2,100 masl Harvest: March 2026 Processing: Hand-picked at peak ripeness. Floated to further remove defects. Held in-cherry for 24 hours. Transported by horse to the main road, then by car to the house and mill. De-pulped. Fermented underwater in stainless steel tanks using the cochadas method, where coffee is added to the fermentation tank throughout the week and then washed together on Monday. Dried until moisture content reaches 10.5%.
