Grown at the El Ocotillo farm in the Cielito micro-region, this Pacas lot from Natividad Benitez is a testament to the high-altitude potential of Santa Bárbara. A traditional 24-hour fermentation in concrete tanks followed by careful washing results in a clean and structured cup. It leads with a crisp pear-like acidity and herbal rooibos notes, grounding into a dense, confectionery sweetness of date molasses and nougat.
