Description
Tasting Notes: Plum, Ginger Candy, Blueberry, Rose, Lemon. This exceptional Decaf lot comes from Wilton Benitez at Granja Paraiso 92, a farm known for its highly scientific and controlled processing methods. The Red Bourbon cherries undergo a 48-hour anaerobic fermentation in whole-cherry form before being washed and dried under strictly monitored conditions using Wilton’s custom-designed equipment. Following the natural processing, the coffee is decaffeinated using the Ethyl Acetate (sugarcane) method. This approach preserves the intense, candy-like sweetness and complex floral aromatics of the original lot, resulting in a vibrant cup that challenges the traditional expectations of decaffeinated coffee.
