This exquisite Gesha coffee from Sebastian Ramirez's El Placer farm in Quindio, Colombia, showcases his innovative white honey processing. The cherries undergo 48 hours of anaerobic fermentation, followed by canopy drying, a 48-hour immersion in oxygenated water, and a two-part final drying, resulting in a complex and unique cup with notes of floral, lemongrass, and a silky, tea-like body.
