Farm: Palanganayoc Variety: 100% Typica Region: Cusco, Peru Altitude: 2,050 Meters Above Sea Level Process: Washed Harvest: October 2025 Notes: Nutty, Raisin & Black Cherry A WHOLESALE-ONLY OFFERING IN 5LB. BULK BAGS.  This is well balanced cup from the Ccapa Family's most recent Typica harvest. The sweetness is upfront with a weighted and well rounded body. This lot has a strong bassline of dark berries, apples and hints of orangey perkiness at cool. In the cup we get notes of vibrant plums, berries, cherries, cacao and dried fruits with a lively & clean finish. This is our first year working with the Ccapa Family. They are way out there in the Challamaba district, our most remote coffee sourced up this point in time. They are a team and tight family, third generation of coffee farmers. They decided to become part of the specialty coffee industry and receive training on quality coffee management in the last few years. Their work is incredible and we are very excited to work with them in the years to come. The farm is located 10 hours away from Cusco, it's far out there where coffee trees from many generations past are still growing and fruiting. This lot of coffee was hand picked at peak ripeness with very selective harvesting. All cherries are washed to eliminate impurities, floating cherries were discarded.  Cherries were then depulped and fermented for 48 hours till mucilage separated from the parchment. Coffee beans were washed and then set  out to dry on shaded drying beds for 18 days. Once coffee beans reach approximately 10.5% moisture content. Typica is culturally and genetically one of the most significant Arabica varieties in the world. Typica & Bourbon are the genetic basis for all of the coffee types found in the world of Arabica coffee cultivation today. Typica's cherry yield is lower than other Arabica varieties. The cup quality potential is high although. This coffee type has made its way from southern Ethiopia to all parts of the equator including India, the South Pacific and Latin America. Typica was the majority of coffee plantations until the 1940's in most of Latin America. Though production can be difficult, it is a brilliant cherry-type that produces some of our favorite coffees of all time.  Our coffees are best after two weeks+ of the roast date.
