With a background in environmental management, he has transitioned Nogales into a research-driven facility focused on biotechnology and sustainable farming practices to enhance coffee quality and community well-being. A different variety processed using the same excellent attention to detail. We love exploring how different coffees react to different processing methods and this Colombia is no exception. Oscar's expertise shines through and showcases variety and the differences between Colombia and Bourbon with both of their coffees on our menu. This lot utilizes a specialized anaerobic fermentation. After de-pulping, the beans are placed in hermetic tanks with mosto; a pre-fermented liquid collected from previous batches that is rich in native microorganisms. The fermentation is monitored at approximately 18°C to maintain stability. Once fermented, the coffee is thoroughly rinsed and dried slowly on raised beds for 15 days, it is followed by a 30-day stabilization period in GrainPro bags to ensure flavor consistency.
