Description
The specially prepared Typica Mejorada is an exceptionally sweet and clean filter coffee with an incredible flavor profile reminiscent of a mix of strawberry cotton candy and fine white peach, with an aftertaste of sweet watermelon. Additionally, this highlight has a very floral aroma and is characterized by its very elegant character. At Finca Soledad, every single step of the process is carried out with the utmost care and love for nature—day and night. Every lot they produce is unique and an expression of the moment, the energy of the pickers, the balance of microorganisms in the soil, and the weather. Everything works together to create a masterpiece of nature. For this absolute nano lot the ripest and best coffee cherries were carefully picked. The average Brix value of the cherries was at least 18 and at most 22. After harvesting, the cherries are hand-sorted. Initially, the coffee is aerobically fermented in an open environment to promote oxidative fermentation. It is then mechanically depulped and fermented in its pulp for 48 hours before being washed and slowly air-dried in the shade (slow drying). Finca Soledad is located on a picturesque mountainside overlooking a beautiful valley through which the Intag River flows. Pepe, who wanted to retire from his career as a mountaineer and researcher and reconnect with the earth, bought the four-hectare land in 2010, which seemed perfectly suited for this purpose. Later, he came to know and love coffee, and thus began his new life as a producer of great specialty coffee. The area around Pepe is beautiful and lush but was deforested in the past, and Pepe and his team are working hard to replant the land with trees. To date, they have planted about 25,000 trees, and the place is slowly returning to the flourishing, lush paradise that Pepe wants to enjoy in peace. Coffee cultivation was not always easy and presented Pepe with some challenges. But gradually, Finca Soledad became more sustainable and a place of peace and well-being for all who work there. When asked what makes his farm so special, Pepe replies: "This is my life, here I find peace." In a land that exudes inner peace and is nourished in return by the people who live there, it is no wonder that the aromas created here are something special. At Finca Soledad, the main varieties grown are Typica Mejorada and Sidra, along with small amounts of Geisha, Caturra, and Castillo.
