This complex Geisha has a very special flavor profile because it was processed in a rum barrel. You can expect a creamy body with notes of crème brûlée and a sweetness of Manuka honey. It has the elegant character of a Geisha and many fine notes reminiscent of jasmine blossoms. Definitely a coffee that will be remembered. INDELIBLE - a name that stands for unforgettable moments and does this coffee justice. The journey of this extraordinary coffee begins with the harvest of the fully ripe Geisha coffee cherries, which reach a value of 24 on the BRIX meter. Each cherry is carefully selected to ensure that only the best and most full-bodied fruits are used. After selection, the cherries are stored in a tank for an extended period, while pH value, temperature, and CO2 content are carefully monitored. Every step is executed with the utmost precision and dedication to ensure that the coffee can reach its full potential. Before the coffee cherries are finally separated from the pulp, they undergo another special step. They are placed in a rum barrel for a certain period, where they absorb the aromas and flavor notes of the barrel. The barrel is carefully rolled to ensure even penetration of the coffee. This unique refinement gives the coffee an additional dimension and makes it a special taste experience. Finally, the remaining pulp is removed from the core, and the coffee beans are sorted by size, density, color, and shape. Each bean is treated with the utmost care to ensure that only the best and most perfect beans find their way into your cup. Subsequently, the coffee is carefully spread out on shaded, elevated African drying beds. Here it is dried with the utmost care, avoiding direct sunlight to prevent cracks in the parchment. The temperature and humidity in the drying houses are strictly controlled and kept within certain parameters. Each individual coffee bean is treated with love and passion so that it can fully develop its unique aromas and flavor nuances. But the journey of the Indelible is not yet over. After the coffee is dried to about 11%, it is packed in special Grain Pro bags and stored in the bodega. Here it can rest, balance its moisture content, and absorb more aroma from the shell. This resting phase is crucial for the quality and distinctive character of the coffee. Subsequently, the coffee is prepared for export in vacuum-sealed 15-kg packages. Finca Deborah is located at an altitude of over 1900 meters and is deeply embedded in the mountains of Volcan, where it is shrouded in dense clouds most of the year.
