Description

This lovely Geisha has a very elegant and floral character, reminiscent of fragrant roses and fine jasmine. We are thrilled by its intense sweetness and the very mild acidity in the aftertaste, reminiscent of ripe raspberries. For this coffee, as with all coffees from Finca Deborah, only fully ripe Geisha cherries with a BRIX value of 21-24 are harvested. These cherries are sorted twice before being placed in closed tanks filled with nitrogen. This displaces the oxygen and allows for better control during this first phase of fermentation. This first phase lasts about 50 hours and is carried out under careful control of temperature and pH value to avoid the development of undesirable flavors. Afterwards, the skin and pulp are completely removed and the coffee is washed. The washed coffee is then placed on the second level of a three-tier drying bed system developed by Jamison Savage. This ensures gentle and even drying in the shade to avoid damage from direct sunlight or excessive heat. Here too, the ambient temperature and humidity are monitored throughout the drying process and kept within clearly defined limits. When the coffee reaches a residual moisture content of 11% after about 12 days, it is packed into bags and stored for several weeks at cool, stable temperatures. This resting period allows the coffee beans to balance their moisture content and complete the development of their aroma. Finally, the parchment is removed and the beans are sorted by size, density, and color before shipping.
