Description
This very complex Geisha is incomparable every year. Its flavor profile includes an intense honeydew sweetness with juicy blueberries and an elegant character reminiscent of bright starflowers. A very special star in the vast coffee universe: This galactically good coffee extremely impressed us during the cupping at our visit to the farm in March 2022. The journey of our INTERSTELLAR from the famous Finca Deborah in Panama begins with the harvest of perfectly ripe Geisha coffee cherries and a careful selection. To achieve this, a single plant is harvested up to 8 times. Subsequently, the cherries are placed in so-called "juices," which are completely naturally formed during fermentation within the fermentation tanks. After that, the coffee is de-pulped and slowly dried in the shade for up to 30 days under constant temperature control to capture every possible flavor nuance. This results in a highly complex, sweet, juicy, and differentiated character that remains simply unforgettable. This is a coffee at the highest level for all who seek a great coffee experience. To maintain its full aroma for as long as possible, this coffee is vacuum-packed in 15kg bags, delivered to us by air freight, and then stored in our Cooling Storage at a constant 15°C. For maximum freshness, we roast this special coffee only on order for you on our Stronghold roaster. Finca Deborah is located at an altitude of over 1900 meters and is deeply embedded in the mountains of Volcan, where it is shrouded in dense clouds most of the year. The plantation offers a beautiful, natural environment where rare plant and animal species thrive, and where the Geisha coffee can reach its full potential under the protection of the lush rainforest. The careful monitoring of the harvest process is one of the most important steps in a long list of quality control requirements. By hand-picking only the ripest cherries and processing those that meet our high standards, it can be ensured that Finca Deborah Geisha is among the best Geisha coffees in the world.
