Josh’s Notes:I could live inside of this bag. There’d be no worries about money, work, or budgeting your very limited time on this earth to spend with your closest friends and family.On bag open, it’s just…wow. Muscat, kiwi, mango, freeze dried strawberries, it’s totally radical. That aroma continues in the grind, and starts to lean heavily into the freeze dried strawberry and mango note. Incredibly complex wet aroma. There’s a little bit of everything, but it really starts to lean ripe mango here IMO. The brew itself is intoxicating. A lychee flavor makes an introduction, and strawberries and mangoes for days. As it cools, a guava and melon notes start to appear. This is an incredibly complex coffee that evolves drastically as it’s temperature changes. One of my favorites for June.Raw Sugar Roast’s Notes:“A lot of Sudanese species of the same farm with experience in winning the COE 1st prize.The all-seems, which are considered to be rare varieties, have high altitude cultivation and resistance to diseases, but cultivation was mainly for low productivity and research and mating purposes.In recent years, it has attracted attention as a variety with top-class potential as well as Geisha because it has a delicate and rich flavor.”Roasted somewhere between light/medium and spectacularly by our friends at Raw Sugar Roast in Tokyo, Japan, rested for 7 days, then vacuum packed and frozen.
