Josh’s notes:Smells like a Williams Sonoma on bag open but I probably shouldn’t write that. It has that bucket of apples, spices lingering through the air conditioned air sort of aroma. Very pleasing. On bloom, the apple gives way to a lovely jasmine florality. In the brew, you get a nice malic acidity like mango, and some more yellow/golden varieties of apple. This is surely another impressive and somewhat understated, very clean Peruvian geisha.Thoughtful’s notes:“The 12x36 washed process begins with 12 hours of dry fermentation in the tank after de-pulping, followed by a full wash and submersion for up to 36 hours. The result is a cup defined by clarity — bright acidity, distinct fruit notes, and nothing in the way.Our first ever offered Peru lot. I deem it a comfort coffee, clean fruit with layered warm spices. In the finish, there's some white florality mixed in. A complex washed coffee.”Roast:Roasted light and spectacularly by our friends at thoughtfulcoffee in Brooklyn, New York, rested for 7 days, then vacuum packed and frozen. I recommend enjoying this coffee right away.
