Tigist Abyot Yirgacheffe OCR SEASONAL   This natural-processed coffee from Yirgacheffe offers a vibrant and aromatic expression of Ethiopia’s most celebrated origin. Carefully grown and sun-dried, it delivers an elegant balance of ripe fruit sweetness and floral clarity. Expect notes of stone fruit, ripe berries, and citrus lift, complemented by soft jasmine aromatics and a clean, tea-like finish. About Coffee   Tigist Abyot & the Smallholder Series This coffee is produced by Tigist Abyot, one of Ethiopia’s most respected smallholder farmers and a leading figure in the Yirgacheffe region. Working with the support of the OCR Smallholder Series, Tigist has become known for her meticulous approach to farming, cherry selection, and processing. Her work highlights the often-unseen role of individual producers within Ethiopia’s cooperative-driven coffee system, bringing traceability and recognition to smallholder craftsmanship.   Origin: Yirgacheffe Yirgacheffe sits at the heart of Ethiopia’s coffee culture, defined by high elevations, fertile soils, and a cool climate that encourages slow cherry maturation. These conditions contribute to the region’s signature profiles—floral aromatics, vibrant acidity, and refined sweetness. Tigist’s farm benefits from these natural advantages, paired with careful cultivation and harvesting practices refined over generations.   Natural Processing For this natural lot, ripe cherries are selectively handpicked and dried whole on raised beds under the Ethiopian sun. Regular turning and close monitoring ensure even drying and prevent over-fermentation, allowing fruit character to develop cleanly and transparently. This method enhances sweetness and aromatic complexity while preserving structure and clarity in the cup.
