What we're tasting:Sparkling Acidity, Red Fruit, Passionfruit, Jasmine About the coffee: At El Diviso, Nestor and Adrian Lasso have taken the specialty coffee industry by storm. Recently, their coffee “Ombligon” was used by the U.S. Barista Champion. We’ll feature that coffee later this year. Their ingenuity with coffee processing highlights the brilliance of Huila coffees in Colombia. Their commitment to the highest quality makes them a perfect fit for our lineup. An intensely floral coffee. The Aji Bourbon variety is a mutation of an Ethiopian Landrace. The coffee was named Aji because the mucilage has a smell and flavor similar to red peppers. The acidity is almost effervescent. There’s brilliant red fruits throughout, followed by florals that remind us of jasmine and honeysuckle. It’s a well balanced coffee with a tea like body and lingering floral finish.
