Description

We’ve had delicious chocolatey decafs for a while, as well as the occasional fruity decaf. This is our first time offering a decaf that fits into our ‘green’ category of floral and citrusy coffees, and it's a delight! We're picking up vibrant notes of orange and apple along with sweet Coco Pops. It's an absolute pleasure to drink any time of day. This coffee is from Siruma, one of our key long-term partners in Colombia via our importer Falcon. Siruma was founded five years ago with the mission of partnering with underserved farming communities in Cauca, Caldas, and Tolima. The company's name comes from the indigenous Wayuunaiki language and means ‘Heaven and Skies’. Victoria and her Siruma team constantly inspire us by how hard they work to improve both their farmers' coffee and livelihoods, and Falcon are exemplary in how they work with Siruma to promote the stories of everyone involved. It's a win-win relationship that we love being a part of. Atunkaa Decaf showcases Siruma's commitment to transparency and fair prices for farmers. It is sourced from the Central Cauca Association for Peace (ACC) in Piendamó, Cauca. ACC was created by a local farmer who wanted to add value to Castillo coffee and provide stable incomes to help neighbours avoid illicit crops. To process Atunkaa, coffee was picked very ripe to achieve higher sugar content. It was then floated to separate the best cherries for processing. The cherries were moved to a mechanical silo for approximately 48 hours at 28°C to dehydrate the coffee until reaching a 20% moisture level. It then underwent a 24-hour fermentation in sealed bags at ambient temperature. The cherries were then dried in the same mechanical silo at 37°C until reaching 15% moisture, after which it was dried again in a parabolic drying system to 10% moisture. The coffee is decaffeinated by Descafecol using a sustainable sugarcane-based process. By working directly with the mill and decaffeinator, Siruma ensures fair pricing and complete traceability back to the contributing farmers.
