A bright, juicy and clean anaerobic natural coffee from Fazenda Joia Rara This yellow catuai opens with a hit of classic anaerobic funk, then settles into a super clean, fruit-forward cup with a juicy, sweet finish. Expect a medley of ripe fruit flavours and a lively acidity that makes this one perfect for summer. Processed as an anaerobic natural, the coffee was fermented as whole cherry in sealed GrainPro bags for 96 hours before being pulped and dried on patios resulting in a bold but beautifully balanced cup. The Barbosa family are leaders in the Cerrado Mineiro region, consistently producing standout coffees. We’re lucky to access lots like this through our partners at Orange Brown Imports. We have found for espresso the optimal age is 10 - 21 days after the roast date and for filter brew methods we find our coffees start tasting best after 3-4 weeks after the roast!
