As it cools, notes of dark cherry also emerge. This is a high-quality lot that truly highlights the best characteristics of the Pacas varietal. Santa Barbara, where the farm is located, is a well-known and very important region among Honduras's coffee-producing areas. It boasts the highest number of COE awards and is said to have the best terroir in the country. The Pacas varietal from this area, in particular, often has excellent acidity and flavor, making it popular among buyers. At Yerin's farm, after depulping the harvested coffee cherries, they first undergo 20 hours of dry fermentation. This is followed by four washes with water, and then a 48-hour soaking in clean water.
