Farmer: Sebastian Ramirez Origin: El Placer, Colombia Process: Anaerobic natural Varietal: Pink Bourbon Roast Level: Superlight In the cup: chocolate liqueur, purple flowers, grape jelly Sebastien Ramirez is no stranger to us & not a new addition to our menu. This coffee in particular though, is ver much a new addition. Called "Midnight Bloom" by Seb, we thought it to be an obvious fit for our Fruits Du Bloom sku. This coffee was produced using anaerobic fermentation on MOSTLY ripe cherries (5% semi ripe) & a LONG fermentation time of 200HOURS! We won't get into the nitty gritty but properly fermenting cherries for 200hrs without incurring mold & other negative impacting bacteria is SO HARD & requires meticulous monitoring. Sebastian Ramirez is a pioneering Colombian coffee producer known for pushing the boundaries of fermentation and flavor design. Working at the forefront of experimental processing, he combines high-Brix cherry selection with extended anaerobic and co-fermentation techniques to create intensely aromatic, fruit-driven coffees that challenge traditional definitions of terroir. His work has helped redefine what modern specialty coffee can taste like, earning recognition among top roasters and competitors worldwide.
