The Guji Lot has been handpicked to highlight the distinct flavors of Ethiopia’s Sidama region, a globally celebrated area for specialty coffee production. Ripe cherries are selected before entering a natural process, where the fruit remains intact around the seed throughout drying. This method allows sugars, mucilage, and fruit compounds to influence the coffee gradually as moisture is reduced. Careful turning, controlled exposure, and protection from excessive heat are essential to maintain cleanliness and prevent unstable fermentation. The goal is not simply to intensify fruit character, but to preserve balance while developing sweetness, texture, and aromatic depth.
