Origin: Ethiopia Region: Arbegona, Sidama Station: Duwancho Producer: Aklilu Kassa Chirrissa Altitude: 2230-2310 masl Variety: 74158 Mini Crop: Picked in Dec.2025 / Arrived in April 2026 by air Process: Anaerobic Honey About farm: Aklilu Kassa Chirrissa is a third-generation coffee operator whose family’s coffee-growing history dates back to the 1960s. While upholding the family’s agricultural traditions, Aklilu Kassa continues to drive industry upgrades, growing the family business into a mature coffee export company founded in 1998. Today, the company boasts modern processing facilities capable of handling both washed and natural processes. Beyond traditional methods, they specialize in specialty and experimental processing techniques, including anaerobic fermentation, honey processing, and specialty fermentations such as "Soup." Coffee cherries are sourced both from their own farms and long-term partner smallholders, forming a stable, high-quality production ecosystem. About process: Anaerobic honey, After harvest, the fresh cherries undergo flotation and grading. They are then depulped and fermented precisely for approximately 18 hours in fermentation tanks. Next, the beans are transferred to raised African drying beds and slowly dried in shaded conditions for 13–15 days to preserve their delicate, multi-layered flavor profile. After processing, small-screen beans (Screen 11 & 12) are sorted and graded separately to ensure a cleaner, more balanced overall flavor.
