This washed Sidra is such a pleasure, exemplifying the potential of the variety while embodying beautiful and clean processing. Yessica Parra, a fourth generation producer and former specialty coffee instructor, manages this lot at her farm along with Diego, El Mirador, in Pitalito. Initially started as a side project in 2021 while both worked for other coffee companies, Diwan Coffee has since become their full-time business and roasted coffee brand. Their goal is for Diwan Coffee to serve as an educational hub for other young producers in Huila to ensure the long-term sustainability of specialty coffee in their region. Similar to their Gesha, the Sidra undergoes a meticulous 48-hour cherry rest followed by an underwater secondary fermentation. The result is a cup that contains a wonderful fruit forward presentations, with a nice herbal sweet backbone, alongside a well structured acidity that carries the cup.
