This method reduces caffeine right at the farm, using natural substances from the coffee cherries itself to remove between 75–97% of the caffeine. What makes it different from typical decaf coffee is that everything needed for the process comes from the same coffee harvest, making it a more self-contained and farm-based approach. PRODUCER Oscar Hernandez, Los Nogales Region Bruselas, Pitalito, Huila Finca Los Nogales is a coffee farm in Bruselas, a small town in Colombia’s Huila region, and has been in the Hernández family for decades. It first became well known when Oscar Hernández’s father, Ricaurte Hernández, won the Colombian Cup of Excellence in 2006. Today, Oscar runs the farm and has turned it into a place focused on experimentation and new ideas. Los Nogales stands out for combining science with coffee growing and processing to push quality and innovation forward.
