The Trademark, our flagship coffee, is sweet, full-bodied and endlessly versatile. We’ve married together two of our most loved Brazilian coffees to create a harmonious and full bodied blend. The Trademark is a versatile coffee with mass appeal - think chocolate brownie and nutella. Rich, balanced and sweet it’s killer on espresso or drip as well as black or through milk. The name takes inspiration from the trademark infringement situation we found ourselves in, in 2025 that prompted our name change to Spilt Milk. The beans come courtesy of the Barbosa family and Deyvid Leandro. They are producing some of the finest coffees in Brazil, winning the Cup of Excellence in 2021 and 2024 and placing 2nd in 2025! We’re honoured to be working with them for the foreseeable future. Roast Level Medium Tasting Notes Chocolate Brownie, Butterscotch, Nutella Origin Brazil Variety Red Catuai Process Natural Producer Deyvid Leandro & the Barbosa family Brew Method Filter: 16:1 water-to-coffee ratio (e.g., 20g coffee to 320ml water), medium-coarse grind Espresso: 2.1:1 yield-to-dose ratio (e.g., 19g coffee to 40ml espresso), fine grind, 31-33-second shot Recommended Resting To get the best out of our coffees we recommend resting them. We have found for espresso the optimal age is 10 - 21 days after the roast date and for filter brew methods we find our coffees start tasting best after 3-4 weeks after the roast!
