(5)x 12oz Retail Bags Farm: Finca La Guinope Process: Washed Elevation: 1,300 MASL Varietal: Catuai Tasting Notes: Maple, Roasted Peanuts, Dried Cranberry The Eguigurems family farm was founded by Lia’s grandfather well before 1900. Over the generations, it has been lovingly cultivated by her father and later, by her older sister. Today, the farm is inherited by three sisters, with Lia leading the efforts to continue the family’s coffee legacy and oversee the cultivation. This washed Catuai blend is cultivated at 1,300 meters above sea level and harvested between January and February. During harvest, temporary collaborators handpick only the ripe cherries, which are transported to the wet mill and depulped on the same day. The coffee undergoes a washed process with 18–24 hours of fermentation, depending on weather conditions. Fermentation takes place in open-air tanks. Afterwards, the parchment is washed and moved to raised beds for drying, typically lasting three or more days depending on the climate, until the coffee reaches around 10.5% humidity. Lia monitors the process closely to continue refining her post-harvest practices and preserve the distinct character of her coffee.
