COLOMBIAPROCESS: WASHED ROAST DATE: APRIL 28, 2026 FROM THE ROASTER IN OUR FIFTH SEASON WORKING WITH AUDON'S COFFEE WE CONTINUE TO BE IMPRESSED WITH HOW CONSISTENTLY DELICIOUS HIS COFFEE IS. FINCA EL TRIUNFO IS LOCATED IN PALERMO HUILA, AND IT SITS AT AN ELEVATION OF APPROXIMATELY 1,800 M.A.S.L. AND CONSISTS OF 26 HECTARES IN TOTAL. OF THOSE 26 HECTARES, APPROXIMATELY 3 HECTARES ARE PLANTED WITH COFFEE, WITH ABOUT 4,000 TREES OF CATURRA AND 10,000 TREES OF V. COLOMBIA. THIS LOT IS COMPRISED OF BOTH VARIETIES, AS THEIR PLANTING IS INTERTWINED ON THE FARM.ASIDE FROM COFFEE, AUDON ALSO GROWS BANANA AND TANGELO TREES. AUDON'S FERMENTATION RECIPE CONSISTS OF TWO FERMENTATIONS: THE COFFEE IS FIRST FERMENTED IN CHERRY FOR 24 HOURS AND THEN DE-PULPED AND DRY FERMENTED IN THE TANK FOR AN ADDITIONAL 36 HOURS. UPON WASHING, THE COFFEE IS LAID OUT TO DRY IN A GREENHOUSE-STYLE STRUCTURE, FOR APPROXIMATELY 12-18 DAYS.
